Beef Kofta with Lemon Yogurt Sauce

A Fun, Spiced Upgrade to Your Favorite Meatballs

Kofta takes classic meatballs to the next level. By infusing ground beef with warm spices like cumin and coriander and pairing it with a bright, zesty lemon yogurt sauce, you turn a simple dinner into a Mediterranean-inspired adventure. It’s approachable for kids, exciting for adults, and works beautifully on the grill, in the oven, or in a skillet.

Why This Recipe Wins

  • Bold Flavor, Familiar Form: It’s essentially a spiced meatball on a stick—which kids find irresistible!
  • The Perfect Dip: The creamy lemon yogurt sauce cuts through the richness of the beef for a perfectly balanced bite.
  • Make-Ahead Magic: You can shape these 24 hours in advance, making weeknight dinner a total breeze.
  • Versatile Cooking: Whether you want to fire up the grill or keep it simple on the stovetop, this recipe adapts to your schedule.

What You’ll Need

For the Kofta:

  • 1 lb Ground Beef: (Or try lamb or turkey for a different flavor!).
  • Aromatics: Finely minced onion and garlic.
  • The Spice Blend: Cumin, coriander, smoked paprika, salt, and pepper.
  • Fresh Herbs: Chopped parsley or mint add a lovely brightness.

For the Lemon Yogurt Sauce:

  • Greek Yogurt: For a thick, creamy base.
  • Lemon Juice & Olive Oil: To add tang and silkiness.
  • Fresh Mint: For that signature cooling finish.

How to Make It

  1. The Mix: Gently combine the beef, onion, garlic, and spices in a bowl.Tip: Don’t overwork the meat! Mixing too much can make the kofta tough.
  2. The Shape: Divide into 8–10 portions and shape them into ovals or cylinders. You can thread them onto skewers or keep them as small patties.
  3. The Cook: * Skillet: Sauté in olive oil for 3–4 minutes per side.
    • Oven: Bake at 400°F for 15–18 minutes.
    • Grill: Cook over medium-high heat for 3–4 minutes per side.
  4. The Sauce: Whisk together the yogurt, lemon, oil, and mint. Drizzle it over the warm meat or serve it on the side.

Get the Kids Involved: The “Kofta Crafts”

Since this recipe is so hands-on, it’s the perfect time to let the kids help in the kitchen.

  • Ages 3–5: Let them be the “Dough Rollers.” Much like play-dough, they can help roll the meat mixture into ovals or patties.
  • Ages 6–9: Have them help whisk the sauce. Watching the lemon juice and oil disappear into the thick yogurt is a great kitchen science lesson.
  • Ages 10+: Let them lead the “Spice Measurement.” They can be in charge of gathering the cumin, coriander, and paprika and explaining how each one smells.

Make It Weeknight-Friendly

  • The Freezer Trick: You can freeze these raw! Shape them, freeze them on a tray, and then transfer them to a bag. You can cook them straight from frozen—just add a few extra minutes to the cooking time.
  • The “Pita Pocket” Hack: For a quick on-the-go meal, stuff the kofta and yogurt sauce into warm pita bread with some shredded lettuce and tomatoes.
  • Swap the Protein: If you want a lighter version, ground turkey works beautifully with these exact same spices.
  • Vegetable Boost: Serve this alongside a fresh cucumber and tomato salad to keep the meal light and refreshing.

Serve & Savor

Whether you serve these over a bed of fluffy rice or tucked into warm flatbread, this Beef Kofta is a weeknight dinner that feels fresh, special, and just a little bit adventurous.

  • 1 small onion, minced

  • 3 garlic cloves, minced

  • 2 tablespoons paprika

  • ½ teaspoon coriander

  • 2 teaspoons ground cumin

  • 1½ teaspoons kosher salt, divided

For the Lemon Yogurt Sauce

  • 1 cup Greek yogurt

  • ¼ cup chopped fresh mint

  • Juice of 1 small lemon

For Serving

  • 4 Middle Eastern flatbreads

  • 1 small Persian cucumber, thinly sliced

  • 1 tomato, sliced

Instructions

1. Make the Kofta Mixture

In a large bowl, combine the ground beef, onion, garlic, paprika, coriander, cumin, and 1 teaspoon of the kosher salt. Mix until well combined.

2. Shape the Kofta

Divide the mixture into 8 equal portions. Shape each portion into a sausage-like log.

3. Cook the Kofta

Heat 1 tablespoon oil in a large sauté pan over medium-high heat. Add the kofta and cook for about 6 minutes total, turning every 2 minutes to brown evenly on all sides and cook through.

4. Prepare the Lemon Yogurt Sauce

While the kofta are cooking, stir together the Greek yogurt, chopped mint, lemon juice, and remaining ½ teaspoon salt in a small bowl.

5. Assemble and Serve

Warm the flatbreads if desired. Place kofta inside each flatbread and top with lemon yogurt sauce, cucumber slices, and tomato. Serve immediately.

Notes

  • You can substitute ground lamb or turkey for the beef if desired.

  • If you don’t have flatbread, serve over rice or in lettuce wraps.

  • Kofta can also be shaped into patties or skewered before cooking.

  • Make the yogurt sauce ahead of time for even deeper flavor.

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
