Recipe

Ingredients

  • 1½ pounds boneless, skinless chicken breasts, sliced into thin strips
  • 2 bell peppers (any color), sliced
  • 1 medium onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Juice of 1 lime
  • 8 small flour or corn tortillas

Optional Toppings:

  • Shredded cheese
  • Sour cream or Greek yogurt
  • Guacamole or sliced avocado
  • Salsa
  • Fresh cilantro

Instructions

  1. Season the Chicken:
In a bowl, toss chicken strips with chili powder, cumin, garlic powder, paprika, salt, and pepper.
  2. Cook the Chicken:
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken and cook for 5–7 minutes, stirring occasionally, until fully cooked. Remove from skillet and set aside.
  3. Sauté the Vegetables:
In the same skillet, add remaining olive oil. Sauté peppers and onions for 4–5 minutes until tender-crisp.
  4. Combine and Finish:
Return chicken to the skillet. Squeeze fresh lime juice over everything and toss to combine. Heat through for 1–2 minutes.
  5. Serve:
Warm tortillas and serve chicken and vegetables straight from the skillet. Let everyone build their own fajitas with favorite toppings.

Getting Kids Involved

  • Kids can help mix the seasoning blend.
  • Let them arrange sliced peppers and onions before cooking.
  • At the table, they’ll love building and folding their own fajitas.

Ingredients

Scale
  • 2 tablespoons oil, divided
  • 2 bell peppers, sliced
  • 2 onions, sliced
  • 2 teaspoons fajita seasoning (or 1 tablespoon for extra spice)
  • 1 teaspoon salt, divided
  • 1 ½ pounds chicken breast, cut into 2-inch strips
  • 1 lime, juiced
  • ¼ cup fresh cilantro, chopped

Instructions

Step 1: Cook the Vegetables

Heat 1 tablespoon of oil in a large sauté pan over medium-high heat.

Add the sliced onions and bell peppers. Sauté for 5–6 minutes, or until they begin to soften and slightly caramelize.

Remove from the pan and set aside.

Step 2: Cook the Chicken

Add the remaining 1 tablespoon of oil to the pan.

Add the chicken strips, 1 teaspoon fajita seasoning, and ½ teaspoon salt. Sauté for about 2 minutes, stirring occasionally.

Step 3: Bring It Together

Return the onions and peppers to the pan.

Add the remaining 1 teaspoon fajita seasoning and ½ teaspoon salt. Cook for another 2 minutes, or until the chicken is cooked through.

Step 4: Finish with Fresh Flavor

Add the lime juice and chopped cilantro. Stir to combine and remove from heat.

Serve immediately with warm tortillas and your favorite toppings.

Notes

  • Customize the spice level: Use up to 1 tablespoon of fajita seasoning if your family enjoys extra heat.

  • Don’t overcrowd the pan: Cook in batches if needed for better browning.

  • Serving ideas: Top with avocado, sour cream, shredded cheese, salsa, or pico de gallo.

  • Meal prep friendly: Store leftovers in an airtight container for up to 3 days.
