2 firm but ripe peaches, cut into 1-inch pieces

Instructions
In a large bowl, whisk together the Dijon mustard, honey, cider vinegar, olive oil, and salt until smooth and well combined.
Step 2: MarinateAdd the chicken, peach, and bell pepper pieces to the bowl. Toss gently to coat everything evenly in the marinade.
Cover and refrigerate for up to 2 hours.
Step 3: PreheatPreheat your grill to high heat or set your oven broiler to high.
Step 4: Assemble & CookThread the marinated chicken, peaches, and bell peppers onto skewers, alternating ingredients.
Cook on the grill or under the broiler for about 6 minutes total, turning halfway through, until the chicken is cooked through and lightly caramelized.
