Chicken Tikka Masala // Vegetarian Tikka Masala

Ingredients

Scale
  • 4 chicken breasts (4 oz each, boneless, skinless)
  • 1 ½ c. brown rice
  • 1 large russet potato (peeled, diced into 1 1/2” cubes)
  • 8 oz haricot vert (blanched)
  • 3 pieces naan
  • Greek yogurt (for serving)
  • 1 large cauliflower (vegetarians, cut into florets)
  • 15 oz chickpeas (vegetarians, 1 can – drained)
  • 1 jar Tikka Masala Sauce

For chicken marinade:

  • 4 oz yogurt
  • 1 Tbsp lemon juice
  • 1 Tbsp garam masala
  • pinch of salt
