Ingredients
-
2 cooked chicken breasts, shredded
-
4 hamburger buns
-
½ cup barbecue sauce, or more to taste
-
Coleslaw, optional
-
Pickles, optional
Instructions
-
Shred the chicken. Remove any bones and skin from leftover roast chicken, then shred the meat into bite-size pieces.
-
Heat the chicken. Place the shredded chicken in a skillet over medium heat. Add the barbecue sauce and stir until the chicken is evenly coated.
-
Simmer. Cook for 2–3 minutes, stirring occasionally, until the chicken is heated through and absorbs the sauce.
-
Toast the buns. Lightly toast the hamburger buns in the oven or on a stovetop griddle until warm and golden.
-
Assemble the sandwiches. Divide the BBQ chicken among the bottom buns. Add coleslaw for crunch and pickles for a tangy finish, if desired. Cover with the top buns.
-
Serve. Enjoy immediately while the chicken is warm and the buns are lightly toasted.
Notes
-
Use leftover chicken: Roast chicken makes this recipe especially quick. Remove all bones before shredding.
-
Adjust the sauce: Start with ½ cup barbecue sauce and add more if you prefer a saucier sandwich.
-
Toast the buns: Lightly toasted buns hold up better against the warm chicken and sauce.
-
Keep the chicken moist: If the mixture seems dry, add a splash of water or extra barbecue sauce while reheating.
