Eggplant Burgers

These tender eggplant burgers combine sautéed eggplant, garlic, parsley, Parmesan, and breadcrumbs into flavorful golden patties.

The “Crispy & Juicy” Eggplant Burgers

When you’re tasked with serving up a satisfying burger for kids who “just don’t like meat,” sometimes the best solution is leaning into a hearty garden vegetable that delivers big, juicy flavor without the beef. These Eggplant Burgers combine tender roasted eggplant, savory aromatics, and a crisp outer crust tucked into a warm bun with melted cheese right at home. It’s a “wholesome” twist that had the in-house testers absolutely thrilled—to the point where one could barely hear a muffled “pass another burger” through bites of warm, savory goodness!

Why This Recipe Wins

  • Plant-Based Power: By turning tender eggplant and pantry binders into a hearty patty, the recipe provides a “filling and tasty” alternative that fulfills every craving for a classic burger without any red meat.
  • Dinner Surprise: Moving away from a “standard tedious routine” of relying on out-of-season grocery produce flown in from thousands of miles away turns an ordinary weeknight into a “special holiday” event starring peak-season flavor straight from your freezer.
  • Naturally Crispy & Moist: Balancing a moist, tender center with a crunchy, pan-seared exterior provides a “rich yet robust” flavor profile that holds its own under a blanket of melted cheese.
  • 10-Minute Reheat Ease: These “kid-approved portions” freeze like a dream, making them an ideal choice for busy parents who need a nourishing lunch, dinner, or snack in ten minutes flat.

What You’ll Need

  • The Star Vegetable: Fresh eggplant (peeled and diced, cooked until wonderfully soft and tender).
  • The Texture Binders: Breadcrumbs (or rolled oats) and an egg (or flax egg) to help the patties hold their firm shape.
  • The Savory Seasoning: Grated Parmesan cheese, minced garlic, Italian seasoning, salt, and black pepper.
  • The Golden Sear: Olive oil for searing the patties in a skillet until crisp.
  • The Burger Buns & Melts: Soft whole wheat burger buns and sliced mozzarella, provolone, or cheddar cheese.

How to Make It

  • The Eggplant Cook: Cook the diced eggplant in a skillet with a splash of olive oil and water until soft and tender so the pieces don’t remain “perfectly crisp” and spongy.
  • The Patty Mix: In a large mixing bowl, combine the cooked eggplant, breadcrumbs, egg, Parmesan, and seasonings “thoroughly, but gently” until the mixture holds together and looks completely “velvety smooth.”
  • The Golden Sear: Shape the mixture into patties and cook in an oiled skillet over medium heat for 4 to 5 minutes per side until the exterior takes on a gorgeous, crunchy “golden-brown” finish.
  • The Cheesy Melt: Place a slice of cheese directly onto each hot patty during the last minute of cooking, covering the pan briefly until melted and bubbly.
  • The Plate: Tuck into toasted buns with your favorite fixings and hand them right to little eaters for a juicy, “mess-proof” masterpiece!

Get the Kids Involved: The “Eggplant Burger Squad”

Since mashing vegetables and assembling burgers is super interactive, this is a “ton of fun” for kids to help assemble and enjoy.

  • Ages 3–5: Let them be the “Bun & Cheese Stackers.” They can help place the soft buns on plates and lay cheese slices on top, practicing their “precision.”
  • Ages 6–9: Have them help as “The Patty Shapers.” Show them how scooping the eggplant mixture and pressing it into round burger shapes creates a “scrumptious” homemade patty.
  • Ages 10+: Let them lead the “Patty Searing & Flipping.” Under supervision, they can monitor the skillet and look for the “magic crust” as the patties brown and sizzle to perfection.

Tips for Success

  • Cook Out the Moisture: If your cooked eggplant is overly watery, the patties can turn mushy. Cooking the eggplant until the excess liquid evaporates is imperative to achieve that “tender and rich” interior with a firm bite.
  • Don’t Skip the Freezer Stash: The goal is stress-free meal planning year-round, so freezing cooked patties between parchment paper ensures dinner stays “refreshing and light” on prep work during busy winter evenings.
  • The Double-Batch Trick: One can make a “huge batch” at the peak of eggplant season, doubling the recipe and freezing half so warm, homemade burgers are always a “quick and easy” ten minutes away!

Dinner Note: Freeze for the off-season! Stocking your freezer with homemade veggie burgers lets you skip long-distance out-of-season produce and makes pulling together a weeknight dinner a “quick and easy” win.

  • Variation: For a “decadent and indulgent” twist, top the burger with warm marinara sauce and extra melted mozzarella for an Eggplant Parm Burger, or pair it with sliced avocado and garlic aioli to elevate your vegetarian burger rotation even further.

Serve & Savor

The Eggplant Burgers are a “tantalizing taste sensation” that proves meatless family cooking can be “out of this world” juicy, firm, and deeply satisfying. It’s a “versatile” recipe that turns humble summer eggplant into a “memory-making” family favorite.

These tender eggplant burgers combine sautéed eggplant, garlic, parsley, Parmesan, and breadcrumbs into flavorful golden patties.

Ingredients

Scale
  • Olive oil, as needed

  • 1 medium eggplant, cubed (about 1½ cups)

  • 1 garlic clove, minced

  • ½ teaspoon kosher salt

  • ¼ cup chopped parsley

  • 1 large egg

  • ⅓ cup grated Parmesan cheese

  • 1 cup breadcrumbs

Instructions

  1. Cook the eggplant. Heat a thin layer of olive oil in a large sauté pan over medium heat. Add the cubed eggplant and cook for about 3 minutes.

  2. Add garlic and salt. Stir in the minced garlic and kosher salt. Continue cooking for another 2 minutes.

  3. Steam until tender. Add 1 tablespoon of water, cover the pan, and cook for another 3 minutes, or until the eggplant is fork-tender.

  4. Cool the eggplant. Remove the pan from the heat and allow the eggplant mixture to cool before blending.

  5. Blend the ingredients. Transfer the cooked eggplant to a food processor. Add the parsley, egg, Parmesan, and breadcrumbs. Process until smooth and combined.

  6. Shape the patties. Use about 2 tablespoons of mixture for mini burgers or ¼ cup for larger burgers. Shape each portion into a patty.

  7. Cook the burgers. Heat 1–2 teaspoons of olive oil in a large sauté pan over medium heat. Cook the patties for about 2 minutes per side, until golden brown and cooked through. Work in batches if necessary.

  8. Serve. Transfer to a plate and enjoy warm.

Notes

  • Cook the eggplant until tender: Properly softened eggplant blends more easily and creates a smoother patty mixture.

  • Cool before blending: Hot eggplant can create excess steam in the food processor and may partially cook the egg.

  • Shape evenly: Keep patties similar in thickness so they cook at the same rate.

  • Handle gently: The mixture may be soft, so use a spatula when transferring patties to and from the pan.

  • Avoid overcrowding: Cook in batches to help each patty develop a golden crust.
