Ingredients
-
2 bananas, sliced into about 30 wheels
-
5 tablespoons peanut butter (or almond butter, cashew butter, sunflower seed butter, or crunchy peanut butter)
-
1 tablespoon coconut oil
-
1 cup semi-sweet, dark, or milk chocolate chips
Instructions
Step 1: Assemble the Banana Sandwiches
Place 15 banana slices on a parchment-lined baking sheet or plate. Top each slice with about ½ teaspoon of peanut butter. Add another banana slice on top to create little “sandwiches.”
Step 2: Freeze
Place the banana sandwiches in the freezer for at least 1 hour, or until firm.
Step 3: Melt the Chocolate
In a microwave-safe glass bowl, melt the coconut oil and chocolate chips for 30 seconds to 1 minute, stirring until smooth. Alternatively, melt them together in a small saucepan over low heat for 2–3 minutes, stirring continuously.
Allow the chocolate to cool slightly for about 5 minutes.
Step 4: Dip and Freeze Again
Using a fork, dip each frozen banana sandwich into the melted chocolate, making sure it’s fully coated. Let the excess chocolate drip off before placing it back onto the parchment-lined tray.
Freeze for at least 1 hour (or up to 24 hours) until fully set.
Step 5: Store
Transfer the frozen bites to a zipper bag or airtight container and store in the freezer for up to 3 months.
Notes
-
Work in Batches: Keep most of the banana bites in the freezer while dipping. They thaw quickly and can become slippery.
-
Cool the Chocolate Slightly: If the chocolate is too hot, it can melt the peanut butter and cause the banana slices to slide apart.
-
Use Parchment Paper: This prevents sticking and makes cleanup much easier.

Storage Tip: Label your container with the date so you know when you made them.
