As founder of NourishedRX and a mom, Lauren Driscoll blends her healthcare expertise with real-world parenting experience, helping families access the food and nutrition they need to thrive. In case you missed it, you can revisit Lauren’s Order Up! interview from earlier this week; we are truly inspired by her mission using food to nourish families—both at the table and in the wider community. From her own kitchen staples to kid-friendly hacks, her rapid-fire picks give a glimpse into how she keeps healthy, approachable, and delicious meals within reach every day.

A cookbook or food writer you recommend?
I love Ottolenghi. [Bookshop, Amazon]
Your go-to weeknight meal when time is short?
A simple caprese salad with a broiled chicken breast.

What’s one ingredient you always keep stocked in your kitchen?
Sea salt. Love it.

Favorite healthy snack right now?
Nori, the little seaweed snacks.
A kid-friendly pantry staple you always buy in bulk?
Definitely brown rice. (Also, a bonus nerdy one: creatine—but that’s just for me!)

One food swap for families wanting to eat healthier without overcomplicating things?
Frozen vegetables. They’re just as healthy as fresh, and you don’t have to worry about produce going bad. Like frozen broccoli florets, for example.
Did your kids go through a picky-eater phase? Any tips?
Oh yes. Each of my kids had one “I don’t have to eat” item—one son chose kale, the other broccoli. We didn’t argue about it, and that was fine.
Do your kids eat kale and broccoli now?
Yes! Parents of picky eaters take heart, they usually outgrow it.

Favorite supplement or wellness product?
Creatine and vitamin D. I usually mix a scoop of creatine with water each morning. [Check out The Brain Plate, by our friends Ann Kent and Amanda Ashcraft, to learn more about supplements!]
Go-to power breakfast for you and a kid-friendly version?
For me: Greek yogurt with berries. For the kids: little vegan zucchini muffins, you can buy them at Whole Foods and they’re super easy to freeze and simply pull out whenever needed.
