Build a fresh, colorful salad platter loaded with crisp greens, crunchy vegetables, creamy avocado, sweet corn, and tangy sun-dried tomatoes. A simple homemade lemon Dijon dressing brings everything together with a bright, savory finish. It’s easy to customize with whatever vegetables you have on hand and makes a refreshing side dish or a light meal to share.

For the Salad

  • 2 bags mixed salad greens

  • 1 bunch radishes

  • 2 avocados, sliced

  • 2 Persian cucumbers

  • 2 tomatoes

  • ½ cup chopped sun-dried tomatoes

  • 2 corn cobs, raw, steamed, or grilled, with kernels removed

  • 8 ounces mushrooms

  • 2 bell peppers

For the Lemon Dijon Dressing

  • ¼ cup olive oil

  • 3 tablespoons lemon juice

  • 1 garlic clove, minced

  • 1 teaspoon honey

  • ½ teaspoon kosher salt

  • 2 teaspoons Dijon mustard

  • Fresh herbs, optional

Instructions

1. Prepare the Vegetables

Wash and dry the salad greens and vegetables. Slice the radishes, cucumbers, tomatoes, and bell peppers into bite-sized pieces. Slice the avocados and mushrooms, and cut the corn kernels off the cobs if you haven’t already.

2. Build the Salad Platter

Spread the mixed greens over a large serving platter. Arrange the radishes, cucumbers, tomatoes, sun-dried tomatoes, corn, mushrooms, bell peppers, and avocado over the greens.

Group the vegetables in sections for a colorful presentation, or scatter them across the greens for a more casual look.

3. Make the Dressing

Add the olive oil, lemon juice, minced garlic, honey, salt, Dijon mustard, and optional fresh herbs to a jar with a lid. Shake until combined. Alternatively, whisk everything together in a small bowl until the dressing looks smooth.

4. Dress and Serve

 

Drizzle the dressing over the salad just before serving and toss gently to coat. If you’re serving the platter family-style, you can also leave the dressing on the side so everyone can add as much as they like.

Notes

  • Dry the greens well: Excess water can dilute the dressing and make the salad less crisp.

  • Keep the colors varied: Red tomatoes, green cucumbers, purple radishes, and yellow corn make the platter inviting.

  • Add avocado last: Slice it shortly before serving to help keep it fresh-looking.

  • Dress just before eating: This helps prevent the greens from wilting, especially if you’re preparing the platter ahead.

  • Taste the dressing: Add a little more lemon juice for brightness or honey if you’d prefer a sweeter balance.

  • Use what you have: Carrots, snap peas, roasted vegetables, or other favorite salad ingredients can fit right in.
