Salad Platter

Build a fresh, colorful salad platter loaded with crisp greens, crunchy vegetables, creamy avocado, sweet corn, and tangy sun-dried tomatoes. A simple homemade lemon Dijon dressing brings everything together with a bright, savory finish. It's easy to customize with whatever vegetables you have on hand and makes a refreshing side dish or a light meal to share.

The “Fresh & Customizable” Massive Salad Platter

When you’re tasked with serving vegetables for a healthy, “snack-loving” family, sometimes the best solution is to ditch the traditional bowl for a beautiful, sprawling board. This Massive Salad Platter uses tons of fresh veggies, chopped fruits, nuts, and a zesty lemon vinaigrette to create an interactive meal right at home. It’s a “wholesome” twist that had the in-house testers absolutely thrilled—to the point where diving into this gigantic spread felt like an absolute dream come true for both kids and adults!

Why This Recipe Wins

  • Veggie Power: By placing a ton of fresh foods out on a board, the dish provides a “filling and tasty” nutrient boost that gets kids excited to make better choices and try new foods.
  • Platter Surprise: Moving away from a “standard tedious routine” of tossing a basic side salad turns a casual afternoon at the pool into a “special holiday” event.
  • Naturally Fresh & Zesty: Pairing a rainbow of raw vegetables with a vibrant lemon vinaigrette provides a “rich yet robust” flavor profile that completely suits your tastes.
  • Fully Customizable Ease: These “kid-approved portions” allow everyone to grab exactly what they want, making it an ideal choice for feeding a crowd of picky eaters.

What You’ll Need

  • The Fresh Base: Tons of fresh veggies (think crisp cucumbers, tomatoes, carrots, and leafy greens) arranged beautifully to catch the eye.
  • The Sweet & Nutty Crunch: Chopped fruits and a handful of nuts to add fantastic texture and variety to the board.
  • The Zesty Finish: Your favorite salad dressing—like a go-to lemon vinaigrette—or even a few different options set out for dipping and drizzling.
  • The Serving Secret: A massive, pretty platter and a trusty pair of tongs to make it easy for everyone to grab big bunches!

How to Make It

  • The Veggie Prep: Wash and chop your vegetables into bite-sized pieces so they are primed to be grabbed easily and remain “perfectly crisp.”
  • The Board Build: Arrange the veggies, fruits, and nuts in colorful clusters on the platter, placing them “thoroughly, but gently” so the whole spread looks incredibly inviting.
  • The Dressing Whisk: Whisk together your lemon vinaigrette until the oil and citrus blend completely and look “velvety smooth.”
  • The Presentation: Add a few small bowls of dressing to the board alongside slightly “golden-brown” toasted nuts for a stunning visual contrast among the greens.
  • The Plate: Set out the tongs and let everyone build their own customized, “mess-proof” masterpiece right on their plates!

Get the Kids Involved: The “Platter Squad”

Since choosing vegetables and arranging the board is super interactive, this is a “ton of fun” for kids to help assemble and enjoy.

  • Ages 3–5: Let them be the “Veggie Placers.” They can help sort the colorful veggies into small piles on the board, practicing their “precision.”
  • Ages 6–9: Have them help as “The Dressing Whiskers.” Show them how mixing the lemon vinaigrette creates a “scrumptious” and zesty dip for their carrots.
  • Ages 10+: Let them lead the “Platter Design.” Under supervision, they can chop the fruits and nuts and look for the “magic crunch” as they build the ultimate custom salad.

Tips for Success

  • Options are Crucial: If you force everyone into one flavor profile, you lose the magic of the board. Setting out a few dressing options is imperative to achieve that “tender and rich” trust so kids feel empowered to fill their bodies with better choices.
  • Freshness Matters: The goal is a vibrant spread, so keeping the vegetables chilled until right before serving ensures the platter stays “refreshing and light” even if you are eating out by the pool.
  • The Batch Prep Trick: One can make a “huge batch” of chopped veggies and lemon vinaigrette at the start of the week, allowing you to throw this platter together in minutes whenever a craving hits.

Platter Note: Don’t forget the tongs! It makes grabbing big bunches of your favorite additions a “quick and easy” win that ensures the platter remains accessible to everyone.

  • Variation: For a “decadent and indulgent” twist, add slices of creamy avocado, grilled halloumi cheese, or crispy bacon crumbles to the board to elevate the flavor profile even further.

Serve & Savor

The Massive Salad Platter is a “tantalizing taste sensation” that proves eating a rainbow of veggies can be “out of this world” delicious. It’s a “versatile” setup that turns simple fresh produce and lemon vinaigrette into a “memory-making” family favorite.

Build a fresh, colorful salad platter loaded with crisp greens, crunchy vegetables, creamy avocado, sweet corn, and tangy sun-dried tomatoes. A simple homemade lemon Dijon dressing brings everything together with a bright, savory finish. It’s easy to customize with whatever vegetables you have on hand and makes a refreshing side dish or a light meal to share.

Ingredients

Scale

For the Salad

  • 2 bags mixed salad greens

  • 1 bunch radishes

  • 2 avocados, sliced

  • 2 Persian cucumbers

  • 2 tomatoes

  • ½ cup chopped sun-dried tomatoes

  • 2 corn cobs, raw, steamed, or grilled, with kernels removed

  • 8 ounces mushrooms

  • 2 bell peppers

For the Lemon Dijon Dressing

  • ¼ cup olive oil

  • 3 tablespoons lemon juice

  • 1 garlic clove, minced

  • 1 teaspoon honey

  • ½ teaspoon kosher salt

  • 2 teaspoons Dijon mustard

  • Fresh herbs, optional

Instructions

1. Prepare the Vegetables

Wash and dry the salad greens and vegetables. Slice the radishes, cucumbers, tomatoes, and bell peppers into bite-sized pieces. Slice the avocados and mushrooms, and cut the corn kernels off the cobs if you haven’t already.

2. Build the Salad Platter

Spread the mixed greens over a large serving platter. Arrange the radishes, cucumbers, tomatoes, sun-dried tomatoes, corn, mushrooms, bell peppers, and avocado over the greens.

Group the vegetables in sections for a colorful presentation, or scatter them across the greens for a more casual look.

3. Make the Dressing

Add the olive oil, lemon juice, minced garlic, honey, salt, Dijon mustard, and optional fresh herbs to a jar with a lid. Shake until combined. Alternatively, whisk everything together in a small bowl until the dressing looks smooth.

4. Dress and Serve

Drizzle the dressing over the salad just before serving and toss gently to coat. If you’re serving the platter family-style, you can also leave the dressing on the side so everyone can add as much as they like.

Notes

  • Dry the greens well: Excess water can dilute the dressing and make the salad less crisp.

  • Keep the colors varied: Red tomatoes, green cucumbers, purple radishes, and yellow corn make the platter inviting.

  • Add avocado last: Slice it shortly before serving to help keep it fresh-looking.

  • Dress just before eating: This helps prevent the greens from wilting, especially if you’re preparing the platter ahead.

  • Taste the dressing: Add a little more lemon juice for brightness or honey if you’d prefer a sweeter balance.

  • Use what you have: Carrots, snap peas, roasted vegetables, or other favorite salad ingredients can fit right in.
