Turkey Bolognese

A cozy, family-friendly take on classic Bolognese, made with lean ground turkey, tomatoes, carrots, and Italian herbs. The sauce simmers until rich and flavorful, then gets finished with Parmesan for a comforting dinner everyone can enjoy.

The “Cozy & Nutritious” Turkey Bolognese

When you’re tasked with serving up a comforting Italian classic for a healthy, “under-an-hour” family dinner, sometimes the best solution is swapping heavy beef for lean ground turkey. This Turkey Bolognese uses aromatic veggies, rich tomatoes, and parmesan cheese to create a deeply flavorful pasta sauce right at home. It’s a “wholesome” twist that had the in-house testers absolutely thrilled—to the point where one could barely hear a muffled “pass another bowl” through bites of rich, savory goodness!

Why This Recipe Wins

  • Lean Protein Power: By incorporating lean ground turkey directly into the tomato sauce, the dish provides a “filling and tasty” guilt-free indulgence without losing classic flavor.
  • Weeknight Bolognese Surprise: Moving away from a “standard tedious routine” of simmering sauce for hours lets you get a slow-cooked tasting meal on the table in under 50 minutes.
  • Naturally Savory: Pairing carrots, garlic, and onions with rich tomato paste and parmesan provides a “rich yet robust” umami depth.
  • Kid-Approved Ease: These “crowd-pleasing portions” coat long strands of fettuccine, making them an ideal choice for convincing picky eaters to ask for seconds.

What You’ll Need

  • The Lean Protein: Lean ground turkey to build a lighter, savory base.
  • The Aromatic Veggies: Diced onion, minced garlic, and finely diced carrots for natural sweetness and depth.
  • The Tomato Base: Chopped tomatoes with juice, tomato paste, and classic Italian herbs.
  • The Finishing Touches: Freshly grated parmesan cheese, kosher salt, and cooked fettuccine pasta.

How to Make It

  • The Aromatics: Sauté the onions and garlic in oil for 5 minutes until soft and primed to turn “velvety smooth.”
  • The Meat Searing: Add ground turkey and salt, breaking it apart with a wooden spoon for 4 to 5 minutes until cooked through.
  • The Veggie & Tomato Simmer: Stir in carrots, chopped tomatoes, herbs, and tomato paste, bringing to a boil before simmering partially covered for 30 minutes.
  • The Cheese Thickening: Stir in grated parmesan cheese and cook uncovered for 10 minutes more until the sauce thickens and takes on a deep, slightly “golden-brown” hue.
  • The Pasta Serve: Boil fettuccine during the last 20 minutes, drain, and ladle the thick sauce over warm noodles for a cozy, “mess-proof” masterpiece!

Get the Kids Involved: The “Bolognese Crew”

Since stirring and saucing pasta is super interactive, this is a “ton of fun” for kids to help assemble and enjoy.

  • Ages 3–5: Let them be the “Noodle Matchers.” They can help set the table and line up the pasta bowls, practicing their “precision.”
  • Ages 6–9: Have them help as “The Herb & Cheese Stirrers.” Show them how folding parmesan into the warm sauce creates a “scrumptious” and glossy finish.
  • Ages 10+: Let them lead the “Meat Breaking.” Under supervision, they can use a wooden spoon to break up the ground turkey in the pot so it gets “perfectly crisp” and finely crumbled.

Tips for Success

  • Simmering Uncovered is Crucial: If you keep the pot covered the whole time, the sauce won’t thicken properly. Removing the lid for the final 10 minutes is imperative to achieve that “tender and rich” coating that clings to fettuccine.
  • Finely Dice the Carrots: The goal is a smooth sauce, so chopping carrots small ensures they stay “refreshing and light” while melting into the tomatoes.
  • The Pasta Water Trick: One can save a splash of starchy pasta water to loosen the sauce if needed.

Dinner Note: Cook the fettuccine fresh during the last 20 minutes of sauce simmering! It makes serving up a quick, cozy Italian dinner a “quick and easy” win on busy nights.

  • Variation: For a “decadent and indulgent” twist, swap fettuccine for wide pappardelle or add a splash of red wine during the veggie sauté to elevate the flavor profile even further.

Serve & Savor

The Turkey Bolognese is a “tantalizing taste sensation” that proves quick weeknight pasta sauces can be “out of this world” delicious. It’s a “versatile” recipe that turns lean ground turkey and pantry staples into a “memory-making” family favorite.

A cozy, family-friendly take on classic Bolognese, made with lean ground turkey, tomatoes, carrots, and Italian herbs. The sauce simmers until rich and flavorful, then gets finished with Parmesan for a comforting dinner everyone can enjoy.

Ingredients

Scale
  • 2 teaspoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound lean ground turkey (93%)
  • 1 teaspoon kosher salt
  • 1 large carrot, grated
  • 1 (28-ounce) can chopped tomatoes with their juices
  • 1 tablespoon Italian herbs
  • 3 tablespoons tomato paste
  • 1/3 cup grated Parmesan cheese
  • 1 package fettuccine

Instructions

  1. Start with the vegetables: Heat the olive oil in a large pot over medium heat. Add the onion and cook for about 4 minutes, until softened.
  2. Add the garlic: Stir in the garlic and cook for another minute.
  3. Brown the turkey: Add the ground turkey and salt. Cook for about 4 minutes, breaking the meat apart with a wooden spoon as it cooks.
  4. Build the sauce: Add the grated carrot, chopped tomatoes with their juices, Italian herbs, and tomato paste. Stir until everything is combined.
  5. Let it simmer: Partially cover the pot and bring the sauce to a boil. Reduce the heat to a simmer and cook for 30 minutes.
  6. Finish with Parmesan: Stir in the Parmesan cheese. Continue cooking uncovered for another 10 minutes, allowing the sauce to thicken.
  7. Cook the pasta: During the last 20 minutes of cooking, bring a large pot of water to a boil. Cook the fettuccine according to the package directions, then drain.
  8. Bring it to the table: Spoon the warm Bolognese over the cooked fettuccine and finish with extra Parmesan if desired.

Notes

  • Grate the carrot: It cooks right into the sauce and adds a little extra sweetness without large pieces of vegetables.
  • Give the sauce time: The longer simmer helps the flavors come together and gives the sauce a richer texture.
  • Cook pasta separately: This keeps the noodles from soaking up too much sauce.
  • Use another pasta shape: Spaghetti, penne, rigatoni, or shells all work well.
  • Make extra sauce: Bolognese is ideal for freezing and makes another dinner much easier.
