Ingredients
- 1 package dry yeast
- 1⅓ cups lukewarm water
- 2 cups whole wheat flour
- 2 cups all-purpose flour
- 1 tablespoon olive oil, plus extra for greasing and brushing
- 1 tablespoon honey
- 1½ teaspoons kosher salt
Instructions
1. Activate the Yeast
Combine the yeast and lukewarm water in a bowl. Let it sit for about 5 minutes, until foamy.
If the yeast doesn’t foam, check the expiration date. You may need fresh yeast.
2. Mix the Dry Ingredients
In a large bowl or the bowl of a stand mixer, combine the whole wheat flour, all-purpose flour, and salt.
3. Add the Wet Ingredients
Stir the olive oil and honey into the yeast mixture. Pour the liquid into the flour mixture.
4. Knead the Dough
Using a dough hook, mix on low for about 3 minutes, or until the dough is smooth and elastic.
You can also knead by hand. Turn the dough onto a clean surface and knead for about 10 minutes, until smooth and elastic. The dough should bounce back when gently pressed.
5. Let It Rise
Shape the dough into a ball and place it in a lightly oiled bowl. Cover and let it rise for about 1 hour, or until doubled in size.
6. Divide the Dough
Preheat the oven to 400°F.
Turn the dough onto a lightly floured surface and knead for about 15 seconds. Divide it into 4 equal pieces and shape each into a ball.
Flatten each ball into a disk and let them rest for 5 minutes.
7. Stretch the Dough
Take one dough disk and gently pull and stretch it until it’s about 9 inches across. Keep the dough fairly thin so the finished crust gets crisp.
8. Pre-Bake
Place the dough on a baking sheet or pizza pan and bake for 5 minutes.
9. Add Your Toppings
Remove the crust from the oven and add pizza sauce, cheese, vegetables, or your favorite toppings.
Return it to the oven and bake for about 10 minutes more, or until the crust is crisp and the toppings are cooked.
10. Serve
Let the pizza cool for a few minutes, then slice and serve.
Notes
- Check your yeast: Make sure the yeast foams before continuing. This is a quick way to make sure it’s active.
- Don’t skip the rise: The resting time helps the dough develop its texture and makes it easier to stretch.
- Keep the crust thin: A thinner crust will bake up crispier.
- Make extra: The four dough rounds can be prepared ahead and frozen for future pizza nights.
