A Vibrant, “Pot of Gold” Treat Made from Nature’s Palette

How does a rainbow make you feel? ✨ If you’re like me, those vibrant colors put a massive smile on your face! This Rainbow Nice Cream is a vegan, gluten-free, and nut-free dessert that swaps out gross artificial dyes for the pure, brilliant colors of fruits, vegetables, and herbs. It’s a “labor of love” that takes about 30 minutes to layer, but the look of magic in your kids’ eyes when they see those natural stripes is a massive payoff. It’s therapeutic to make and even better to eat!

The Natural Color Palette

To get those stunning layers without a single drop of food coloring, we use nature’s own “super boosts”:

  • Pink/Red: Frozen raspberries or strawberries.
  • Orange: Frozen mango or a splash of carrot juice.
  • Yellow: Frozen pineapple or a pinch of sunshine-yellow turmeric.
  • Green: A handful of spinach or a dusting of matcha powder.
  • Blue/Purple: Blueberries or a tiny bit of blue spirulina.
  • The Base: Frozen bananas are the secret to that creamy, “churned” ice cream texture across every layer.

How to Make It

  1. Prep the Base: Ensure you have a big stash of frozen banana chunks ready to go.
  2. Blend Layer by Layer: Start with your lightest color (like yellow). Blend frozen banana with the coloring fruit (like pineapple) until it’s the consistency of soft-serve.
  3. The Layering Trick: Carefully spoon the mixture into the bottom of your glasses. Place the glasses in the freezer for a few minutes to “set” while you rinse the blender and move to the next color.
  4. Repeat: Continue blending and layering until you’ve reached the top of the glass with a full rainbow.
  5. Freeze and Soften: Freeze for about an hour for the perfect firm texture.
    • Pro Tip: If making these the night before, move them to the fridge for 30 minutes before serving so they soften up without melting!

Get the Kids Involved

This is the ultimate “birthday party” or special occasion treat that turns the kitchen into a laboratory.

  • Ages 3–5: Let them be the “Color Scouts.” Have them help you find ingredients in the kitchen that match the colors of the rainbow.
  • Ages 6–9: Have them help “paint” the layers into the glasses. It takes a steady hand and is a great way to practice patience!
  • Ages 10+: Let them experiment with “Color Mixing”—what happens if we blend a little bit of the red layer with the blue layer? (Hello, purple!)

Make It Weeknight-Friendly

  • The Therapeutic Strategy: Make this after bedtime! It’s surprisingly relaxing to watch the colors come together while you listen to a podcast or catch up on your favorite show.
  • Shortcut Option: You don’t have to do all seven colors! Even a 3-layer “Sunrise” (pink, orange, yellow) looks spectacular and takes half the time.
  • No Added Sugar: Because the sweetness comes entirely from potassium-filled bananas and ripe fruit, you can feel good about serving this as a midday snack or a “just because” dessert.
  • Texture Secret: Use a food processor if you want an even thicker, more “scoopable” ice cream texture, or a high-speed blender for a silky soft-serve vibe.

Serve & Savor

This Rainbow Nice Cream proves that the most beautiful foods are often the ones that come straight from the earth. It’s a healthy, whimsical treat that makes a believer out of everyone who tastes it.

Ingredients

Scale

Purple Layer:

  • 1 frozen banana, chopped

  • 3/4 cup frozen blueberries or blackberries

  • 23 tablespoons milk of choice

Blue Layer:

  • 2 frozen bananas, chopped

  • 1 teaspoon blue majik powder

  • 23 tablespoons milk of choice

Green Layer:

  • 1 frozen banana, chopped

  • 1 handful fresh baby spinach

  • 1/2 teaspoon matcha green tea powder

  • 23 tablespoons milk of choice

Yellow Layer:

  • 1 frozen banana, chopped

  • 3/4 cup frozen mango

  • 1 teaspoon dried turmeric

  • 23 tablespoons milk of choice

Pink Layer:

  • 1 frozen banana, chopped

  • 1/2 cup frozen pink dragon fruit (about 2 packs)

  • 23 tablespoons milk of choice

Red Layer:

  • 1 frozen banana, chopped

  • 1/4 cup frozen raspberries

  • 1/2 cup frozen strawberries

  • 23 tablespoons milk of choice

Instructions

  1. Prepare Each Layer: Starting with the purple layer, combine all ingredients in a food processor or blender. Pulse until thick and creamy like soft serve. Pause occasionally and use a spatula to push down ingredients.
  2. Layering: Pour the purple nice cream into the bottom of tall glasses. Freeze for 10–15 minutes to set before adding the next layer.
  3. Repeat: Continue with blue, green, yellow, pink, and red layers, freezing briefly between each to prevent colors from blending.
  4. Final Freeze: Once all layers are assembled, freeze the glasses for 1–2 hours until firm and spoonable.
  5. Serve: Scoop and enjoy immediately.

Notes

  • Freezing Tip: Briefly freezing between layers prevents color bleeding and keeps each layer distinct.

  • Adjust Sweetness: Use naturally sweet fruits like ripe bananas or mango. Add a drizzle of maple syrup if desired.

  • Optional Boosts: Add chia seeds, hemp seeds, or a sprinkle of cacao nibs between layers for extra nutrition and texture.

  • Serving: This is best served immediately after final freezing for the soft serve texture.
